These cookies are definitely a family fave recipe but yesterday I made the flax egg for another recipe, and didn’t use it so later in the day I made the cookies…. By then the flax egg was very thick, and the batter behaved as you describe above. I should have remade the egg.

So sorry for not responding sooner – I’m in the middle of a big move!
I haven’t tried it with golden syrup, so I can’t really tell you how it would work. My guess is that if you were to try it you’d have to increase the flour? If you do try, please let me know – I’d love to hear how it goes!

Hmm, I haven’t had that particular problem with that batter and I’ve made them a ton of times (they are one of my family’s go-to cookies). I’m thinking about possible reasons for it being too thick. Did you use 3 tbsp of water for the flax egg? I hope your finished product turned out edible. You know how it goes with baking, it can be super finicky and things like altitude and humidity affect the craziest things. Maybe next time reduce the flour to 1cup or add in a bit more water to the flax “egg”.
